So this week I am not super pleased with my menu.  My husband’s work schedule threw me for a loop.  He normally only works one or maybe on rare occasions two nights a week, but this week he’s working all nights.  So I had the challenge of figuring out meals he’ll enjoy reheated or figuring out other options for him when he comes home from work.  I am grateful he has work, but I swear 13 years with a company they really should not be doing this stuff to him.  That’s another story for another day though.

Monica’s Menu Plan For The Week Of 6/10-6/16

Sunday: Ziti and homemade meatballs with a garden salad.

Monday: Steak on the grill with baked potato and mixed vegetables.  A night when hubby is actually home.

Tuesday: Quesadillas and carrots with dip.

Wednesday: Chicken Piccata with egg noodles and carrots.

Thursday: Chicken and broccoli with rice.

Friday: Homemade pizza made with the sauce from Sunday’s dinner.

Saturday: Breakfast for dinner probably pancakes.  A dinner we can only have when my husband isn’t home because he hates it and the kids and I love it.  Hubby will pick himself up something from work that night.

Chicken Piccata Recipe

Here’s another recipe that people are always asking me for.  I do this from memory now.  The original recipe was for four servings, but I have had to increase it.  I will give you the original though because I don’t measure anything anymore for this one.

Ingredients:

1 pound boneless skinless chicken breast

1/2 cup flour

1 tsp salt

1/2 tsp pepper

3 tbsp parsley

2 tbsp butter

3 tbsp veg. oil

3 tbsp white wine (cooking, I use one with a lemon flavor)

3 tbsp lemon juice

Directions:

Mix flour, salt, pepper, and parsley. Meanwhile in a frying pan heat up the butter and oil. Coat the chicken in the flour mixture. Put in the frying pan. Brown chicken on both sides.

Remove chicken from the pan. Reserve about a tbsp of the grease in the pan. Add the cooking wine to the pan and heat on medium low for about 1 minute. Then add the lemon juice to the pan and heat until boiling.

Place the chicken back in the pan and cook for a few more minutes on each side until heated through. Remove from pan and pour the pan drippings over the chicken. Sprinkle some parsley over the chicken if you so desire.

    • I’d love to have you join. When things get the craziest this is when I appreciate having a menu plan the most. I have started and stopped this a million times though so I know how life has a tendency to get in the way. Doing this is keeping me accountable though ;) .
