Menu Plan Sunday 6/24/2012

The final week of June is here and we are down to the bare minimum in our pantry and freezer.  So we are using up what we have left before we go and do our big July shopping next week.

Monica’s Menu For The Week Of 6/24-6/30

Sunday: Pork chops on the grill with green beans and applesauce.  I know this was on the menu last week, but it was about 100 degrees on our porch that night and I couldn’t see my husband cooking in that.  So we went out that night to get an hour or so of air conditioning too.

Monday: Oven Fried Chicken with rice pilaff and corn (recipe below).

Tuesday: Meatloaf with rice cooked in beef stock and a garden salad.

Wednesday: Chicken and broccoli over rice.

Thursday: Chicken Alfredo.

Friday: Ranch chicken with egg noodles and whatever vegetable I feel like making that night.

Saturday: Ziti with homemade sauce and a garden salad.

Oven Fried Chicken Recipe

This is another recipe from my mom that I make often and do from memory now.  It’s so easy to make.  When I was a child my mom used to set up all of the ingredients for me to make it when she was going to be home late.  Much healthier for you too than fried chicken.

Ingredients

Chicken thighs or legs (I prefer the thighs)

1 cup flour

1 tsp salt

1/2 tsp pepper

1 1/2 tsp paprika

Directions

Preheat oven to 400 degrees.  Combine flour, salt, pepper, and paprika in a bag and shake.  Coat the chicken in the flour mixture and place on a pan with a rack (I actually use my Pampered Chef bar pan without a rack) skin side up.

Place in oven and cook for 1 hour.

That’s it, so simple and so yummy.

    Where do you usually go shopping for the whole month?

    • I shop at BJ’s a wholesale club. We do pick up some things throughout the month like milk and fresh fruits and veggies. But we get most of our meat and non perishables for the month there.

  2. I am really bad with meal planning, definitely something I’d like to learn. I’d love to link up next time I post a recipe! Everything on your menu looks so good, and that baked chicken is so easy! Gotta love those quick and easy meals.

    • I’d love to have you link up Christy. I’m usually really bad about keeping up with the menu plan. Putting it on my blog is helping be because I figure (or hope) others are expecting to see it. I find it so much easier when I do this though because I’m shopping for exactly what we need, always know what we’re having, and don’t have to worry about the 5 pm fight of what do we do about dinner. Everyone knows what to expect and having the kids involved helps too. They eat better because it’s stuff they have help plan.
