Menu Plan Sunday 7/1/2012

One month into my menu plan and things are going great.  I do hope some of you have been joining in or getting some ideas.  I’d love to hear your thoughts on my menu or if there are any recipes I haven’t shared yet that you would like please let me know.  I’ll be happy to share.

Monica’s Menu For July 1 – July 6

Sunday: Turkey Paninis with carrots.

Monday: Chicken Cordon Bleu with potato and mixed vegetables.

Tuesday: Chicken and Vodka Sauce (recipe below).

Wednesday: Happy 4th of July Hot Dogs and Sausage Links with pasta salad.

Thursday: Tacos

Friday: Chicken pattys with french fries and salad.

Saturday: Quesadillas with carrots and ranch dip.

Recipe For Vodka Sauce

We used to get a great vodka sauce in a jar.  Not something I generally like to do, but I can’t find that sauce anymore.  So I found this recipe in a Rachel Ray cookbook that someone had given me.  The cookbook is Rachael Ray Top 30 30-minute Meals Guy Food.  This will be the first time I’m making it.  It sounds great so I think it will be a hit.

Ingredients

1 tbsp extra virgin olive oil

1 tbsp butter

2 garlic cloves, minced

2 shallots, minced

1 cup vodka

1 cup chicken stock

1 can crushed tomatoes

Coarse salt and freshly ground black pepper, to taste

1/2 cup heavy cream

Directions

Heat a large skillet over moderate heat.  Add oil, butter, garlic, and shallots.  Gently saute garlic and shallots, 3-5 minutes.  Add vodka, about 3 turns around the pan in a steady stream.  Reduce vodka by half, 2 or 3 minutes.  Add chicken stock and tomatoes.  Bring sauce to a bubble, then reduce heat to simmer.  Season with salt and pepper.

Just before you are ready to serve stir cream into vodka sauce.  When sauce returns to a bubble, remove from heat.  Toss with pasta and garnish with some basil leaves.
