
Monica’s Menu For August 12 – August 18
Sunday: Breakfast for dinner (seems to be our Sunday night dinner lately on the nights hubby has to work).
Monday: Oven fried chicken, rice pilaff, and corn (pushed back from Saturday when hubby decided he wasn’t in the mood then).
Tuesday: Chicken and summer vegetables.
Wednesday: Homemade macaroni and cheese.
Thursday: Crispy Parmesan Chicken Breast with rice and broccoli (see recipe below).
Friday: Chicken Picatta with egg noodles and carrots.
Saturday: Ranch chicken with bow ties and green beans.
Crispy Parmesan Chicken Breast Recipe
Ingredients
1/3 cup grate Parmesan cheese
1/4 cup seasoned dry bread crumbs
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
6 boneless skinless chicken breast halves
3 tablespoons butter or margarine melted
Directions
Preheat oven to 400. Mix cheese, crumbs and seasonings in shallow dish.
Dip chicken in butter, coat with cheese mixture. Place in greased baking pan.
Bake 20 minutes or until chicken is cooked through.
